Sweet & Savory Shawarma Sauce
YIELD: 1/3 Cup

| 2 tbsp. | Lemon Juice |
| 1 tbsp. | White Vinegar |
| 1/4 tsp. | Onion Powder |
| 1/4 tsp. | Garlic Powder |
| 1/4 tsp. | Dried Oregano |
| 1/4 tsp. | Kosher Salt |
Step 1: Preheat a flattop grill to 350°F and preheat a convection oven to 375°F.
Step 2: In a medium mixing bowl, toss pita wedges in olive oil until evenly coated.
Step 3: Lay pita wedges in single layer on a baking sheet. Sprinkle with cumin, salt and pepper mixture.
Step 4: Bake in oven at 375°F for 15 to 20 minutes or until lightly browned.
Step 5: Place frozen steak on flattop grill, flipping once halfway heated at approximately 30 seconds to 1 minute.
Step 6: Once flipped, separate pieces with spatula and season with salt and pepper. Cook for an additional 45 seconds to 1 minute until fully heated and an internal temperature of 165°F is reached. Remove from heat and hold warm.
Step 7: To plate, lay pita chips on service dish and sprinkle with shredded mozzarella cheese. Place heated steak evenly across pita chips. Top with sliced tomatoes, shredded lettuce and drizzle of shawarma sauce. Serve immediately.
Sweet & Savory Shawarma Sauce
Step 1: Place all ingredients into a medium mixing bowl, whisking until well combined.
Step 2: Pour mixture into a squeeze bottle.
Step 3: Use as need in larger recipe or store under refrigeration.
