Focaccia Chicken Sandwich Recipe

This easy to make sandwich is layered with Tyson Red Label® Fully Cooked Wood Fire Seasoned Chicken Breast Strips, creamy goat cheese, roasted red peppers, arugula and zucchini nestled between fresh baked focaccia slices.

 

Ingredients

YIELD: 1 SANDWICH

AMOUNTMAIN INGREDIENTS
2 Ea.Focaccia Olive Bread, Sliced, Toasted (Commercially Available)
2 Oz.Pesto Basil Sauce (Commercially Prepared)
2 Ea.Gouda Cheese, Smoked, Sliced
1 Oz.Baby Arugula Lettuce
5 Ea.Baby Zucchini, Sliced Lengthwise Thin
1 Oz.Roasted Red Pepper Strips
4 Oz.Tyson Red Label® Fully Cooked Unbreaded Wood Fire Seasoned Chicken Breast Strips

Tyson Red Label® Fully Cooked Unbreaded Grilled Chicken Breast Strips, Large

Directions

Step 1: Pre-heat oven at 350°F.

Step 2: Place Tyson Red Label® Fully Cooked Wood Fire Seasoned Chicken Breast Strips onto a parchment lined sheet pan.

Step 3: Cook for approximately 14-17 minutes and internal temperature reaches 165°F.

Step 4: Remove from oven and hold.

Step 5: Reserve

To assemble:

Step 1: Place both slices of focaccia toast onto a clean worksurface.

Step 2: Spread each slice of focaccia toast with basil pesto.

Step 3: Place two slices of smoked gouda on one side of the prepared toast on top of basil pesto.

Step 4: Place baby arugula on top of smoked gouda.

Step 5: Place zucchini and roasted pepper strips on top of baby arugula.

Step 6: Place Tyson Red Label® Fully Cooked Wood Fire Seasoned Chicken Breast Strips on top of vegetables.

Step 7: Add a bit more of vegetables on top if preferred.

Step 8: Place remaining slice of dressed focaccia toast on top of sandwich to close.

Step 9: Serve as needed.
