Chile Verde
YIELD: 48 OZ.

1/2 cu. | Roasted Poblano, de-stemmed, remove seeds and skin |
2 cu. | Cilantro, leaves, picked |
Step 1: Preheat impinger oven to 450°F.
Step 2: Cover pizza dough tightly and slack in cooler prior to use.
Step 3: Remove pizza dough from cooler and place onto a greased pizza screen. Spread chile verde sauce evenly over the crust in a circular motion.
Step 4: Evenly distribute shredded mozzarella cheese over the top of sauce, then evenly distribute the diced scrambled eggs over the cheese.
Step 5: Top pizza with chorizo crumbles evenly distributed over the top of the pizza.
Step 6: Place into impinger oven and cook for approximately 4 minutes.
Step 7: Slice and serve warm.
Chile Verde
Step 1: Combine all ingredients in a food processor until well incorporated. NOTE: Sauce is not "blended" smooth.
Step 2: Hold cold for service.
