Step 1: Pre heat convection oven to 400°F.
Step 2: Arrange potato skins in a single layer on a sheet tray.
Step 3: Cut bacon strips in half to fit inside the potato.
Step 4: Sprinkle 1 oz. shredded cheddar and 2 halves of bacon in each potato skin.
Step 5: Bake 10 - 12 minutes, skins should be golden brown and bacon should be crispy.
Step 6: Allow to cool 1-2 minutes before plating.
Step 7: Drizzle with ranch and garnish with chives before serving.
