Peppered Bacon Skewer

Pickle Skewer

YIELD: 12 EA.

AMOUNTSUB-RECIPE INGREDIENTS
12 ea.Bamboo skewer, 8 in.
12 ea.Cherry Tomato
12 ea.Olive, Manzanilla
12 ea.Pepperoncini
12 ea.Mozzarela, pearls
Directions

Step 1: Pre-heat flat top griddle to 350°F. Lay bacon flat and cook until golden and crispy. Be sure to turn during cooking to brown evenly. Allow to cool and crisp.

Step 2: Rim an appropriately sized glass with chili pepper seasoning and add ice.

Step 3: Pour in vodka then bloody mary mix making sure there is still space for liquid displacement when adding garnishes.

Step 4: Garnish with celery heart and bacon skewer in drink.

Step 5: Garnish with pickle skewer on the side and serve cold with slices of bacon on the side.

Peppered Bacon Skewer

Step 1: Preheat convection oven to 375°F.

Step 2: Skewer bacon in an "S" shape on metal skewer.

Step 3: Lay skewers flat on a sheet tray and bake until bacon is golden brown and crispy.

Step 4: Allow to cool before service.

Pickle Skewer

Step 1: Skewer 1 each pepperoncini, olive, tomato, and mozzarella pearl per skewer.

Step 2: Hold cold for service.
