Tender diced chicken breast tops this bright-and-creamy roasted red pepper and lime bisque.

3 ea. | Roasted Red Peppers, Prepared |
1 ea. | Small Onion, Peeled and Chopped |
2 ea. | Garlic Cloves, Peeled and Smashed |
2 cups | Vegetable or Chicken Broth |
1 cup | Coconut Milk or Heavy Cream |
1 tbsp. | Olive Oil or Unsalted Butter |
1-2 ea. | Fresh Limes, Juiced |
to taste | Salt and Pepper |
Step 1: Heat olive oil (or butter) in a medium-sized pot over medium heat. Add onion and garlic; cook for 3 - 4-minutes or until tender.
Step 2: Stir-in roasted red peppers and broth. Simmer for 5 - 7-minutes.
Step 3: Using an immersion blender, blend ingredients in pot until smooth.
Step 4: Add coconut milk (or cream) and stir until well combined. Allow to simmer uncovered for 2-minutes.
Step 5: While bisque is simmering, warm the pre-cooked diced chicken.
Step 6: After two minutes of simmering bisque, turn-off heat and stir-in half of lime juice. Add salt, pepper and additional lime juice, to taste. Add warmed chicken pieces, reserving small portion to use as garnish.
Step 7: Ladle into service bowl and top with reserved chicken pieces. Serve immediately.
