Southwest BBQ-Ranch Chicken Salad Lettuce Cups

Tender pulled chicken in a BBQ-Ranch sauce, piled high on bibb lettuce with a black bean and corn salsa and shredded cheese.

Ingredients

SERVES:  10 SERVINGS

22 oz. Tyson® All-Natural* Pulled Chicken, #1046210928 
20 leaves Bibb Lettuce (or green leaf lettuce) 
1 cup BBQ Sauce 
½ cup Ranch 
1 2/3 cups Black Beans, drained 
1 2/3 cups Corn 
1 2/3 cups Tomatoes, diced 
2 Tbsp Lime Juice 
10 oz. Shredded Cheddar Cheese 
Directions
  1. Thaw pulled chicken
  2. In large mixing bowl, combine BBQ sauce and Ranch, then add pulled chicken and thoroughly mix together to create the Southwest BBQ-Ranch Chicken Salad.  Hold under refrigeration until ready to serve
  3. In a mixing bowl, combine Black Beans, Onions, Tomatoes and Lime juice, then hold under refrigeration until ready to serve

 

To Build Lettuce Cups:

  1. Place 2 leaves of lettuce in serving container
  2. Using a #16 scoop (2.0 oz), top lettuce with BBQ-Ranch Chicken Salad
  3. Using a #8 scoop (1/2 cup), place Black Bean and Corn Salad around the Chicken Salad on the lettuce then serve
