Southwest BBQ-Ranch Chicken Salad Lettuce Cups Recipe

Tender Tyson® All Natural* Pulled Chicken in a BBQ-Ranch sauce, piled high on bibb lettuce with a black bean and corn salsa and shredded cheese.

Ingredients

AMOUNTMAIN INGREDIENTS
22 oz. Tyson® Fully Cooked All Natural* Low Sodium Pulled Chicken, Reverse Blend 65 Dark/35 White Meat Chicken #10460210928
20 leaves                              Bibb Lettuce (Or Green Leaf Lettuce)
1 cup BBQ Sauce 
1/2 cup Ranch 
1 2/3 cups Black Beans - Drained
1 2/3 cups Corn 
1 2/3 cups Tomatoes - Diced
2 Tbsp Lime Juice 
10 oz. Shredded Cheddar Cheese 
Directions

Step 1: Thaw pulled chicken.

Step 2: In large mixing bowl, combine BBQ sauce and Ranch, then add pulled chicken and thoroughly mix together to create the Southwest BBQ-Ranch Chicken Salad.  Hold under refrigeration until ready to serve.

Step 3: In a mixing bowl, combine Black Beans, Onions, Tomatoes and Lime juice, then hold under refrigeration until ready to serve.

 

To Build Lettuce Cups

Step 1: Place 2 leaves of lettuce in serving container.

Step 2: Using a #16 scoop (2.0 oz), top lettuce with BBQ-Ranch Chicken Salad.

Step 3: Using a #8 scoop (1/2 cup), place Black Bean and Corn Salad around the Chicken Salad on the lettuce then serve.
