1 CupFour, All-Purpose
1 CupMeal, Cornmeal, Prepared
1 TbspPowder, Baking
1 tsp.Seasoning, Chipotle, Powder
½ tsp.Salt, Kosher
1 CupCorn, Kernel, Fz, Thwd
2 Ea.Eggs, Whole, Cracked, Beaten
1 CupMilk, Whole
¼ CupWater, Room-temp
2 Tbsp.Cilantro, Fresh, Chpd
2 Tbsp.Oil, Canola

 

Directions

Step 1: Pre-heat oven at 375 degrees F.

Step 2: Place Jimmy Dean® Fully Cooked, Mild Pork Sausage Patties onto a parchment lined sheet tray.

Step 3: Cook for 12 to 14 minutes and internal temperature reaches 165 degrees F. turning halfway through heating time.

Step 4: Remove from oven and place onto a wire rack at 135 degrees F.

Step 5: Reserve

To assemble:

Step 1: Place prepared Johnny cakes onto a serving dish.

Step 2: Top Johnny cakes with two pieces of Jimmy Dean® Fully Cooked Pork Sausage Patties.

Step 3: Top with two poached eggs and cover with hollandaise sauce.

Step 4: Sprinkle dish with diced tomatoes and green chilies.

Step 5: Serve as needed with a roasted green chili on the side.

Sub Recipe Directions

Step 1: Mix the flour, cornmeal, baking powder, chili powder and salt in a large bowl.

Step 2: Stir in the beaten eggs, buttermilk or milk and water.

Step 3: Mix until you have a thick batter.

Step 4: Let the batter rest for 5 minutes to hydrate the dry ingredients.

Step 5: Heat a bit of oil in a large pan to medium heat.

Step 6: Add 1/4 cup Johnny cake batter to the pan and cook 5 minutes per side, or until they are nicely browned.

Step 7: Remove the Johnny cakes from the pan and repeat until all the batter is used up.

Step 8: Add more oil to the pan as needed.

Step 9: Serve as needed.
