Breakfast Empanadas Recipe

Breakfast Empanadas? Ya’ gotta! It’s so easy and so delicious. Combine fresh spinach, artichokes and smoked gouda cheese and spoon that deliciousness into an empanada, fold and serve alongside Jimmy Dean Fully Cooked Pork Sausage Links. Wala! Amazing Breakfast Empanadas!

Ingredients

SERVING AMOUNT:

3 ea.

Jimmy Dean® Fully Cooked Pork Sausage Links, sliced on the bias

½ oz.

Spinach, baby leaves

1 oz.

Artichoke Hearts, sliced

1 ½ oz.

Smoked Gouda Cheese, shredded

As needed

Empanada Dough

As needed

Parsley, as garnish

Directions

Step 1: Convection Oven:
Preheat oven to 375°F. Heat 12-14 minutes, turning halfway through heating time. 

Step 2: Combine all ingredients together in a large bowl and set aside. 

Step 3: Roll out pie empanada dough, using 6-inch biscuit cutter, cut to get as many circles as possible out of the package. Add spoonful of mixture, fold empanadas up and place the dough onto a baking sheet. 

Step 4: Convection Oven 400°F. Place the baking sheet into the oven and cook for around 20-30 minutes or until puffy and golden.

Step 5: Garnish with parsley and serve with cooked sausage links on the side (optional).
