Sweet & Spicy Mango Chicken Roti Wrap Recipe

All Natural* diced chicken tossed in a sweet and spicy mango chutney sauce, wrapped tight in a while grain tortilla with warm roasted sweet potatoes and a crunch Jerk coleslaw.

"Mango Chutney"

4 cups

Mango, frozen cubed, Simplot

1 cup

White Onion, small dice

½ cup

Jalapeno, small dice

1 cup

Red Bell Pepper, small dice

1 Tbsp.

Garlic, granulated

1 Tbsp.

Ginger, powdered

1 tsp.

Cinnamon, powdered

1 tsp.

Brown Sugar

¼ cup


¼ cup

Apple Cider Vinegar


“Jerk Slaw”

16 oz

Slaw Mix

2 oz


2 oz

Jerk Sauce, prepared

1 oz

Lime Juice

Step 1 - Mango Chutney – Combine all ingredients in a medium sauce pot. Bring to a simmer over low heat while stirring frequently to keep from sticking. Simmer for 10-15 minutes, the sauce should look syrupy when finished. Remove from heat and cover to hold for service. Can be made 1-2 days before service, just warm back up before service.

Step 2 - Jerk Slaw – Thoroughly mix together the slaw mix, mayonnaise, jerk sauce, and lime juice. Hold cold for service. Can be made 1-s days before service.  Just mix again before service

Step 3 - Preheat convection oven to 350°F. Place frozen chicken pieces on parchment lined baking sheet coated with cooking spray and heat 25 - 30 minutes. Or internal temperature reaches 165°F.

Step 4 - Toss warm chicken in mango chutney while hot. Hold hot for service.

Step 5 - Heat sweet potatoes according to manufacturer’s instructions. Hold hot for hot service.

Step 6 - ***Lightly toast the tortilla on a flattop 10-15 seconds per side to make it more pliable and easier to roll. You can also hold them in a hot box in the original packaging to achieve the same effect.


To serve:

  1. Lay tortillas flat on prep surface.
  2. Add 2 oz. of slaw to the middle of the tortilla.
  3. Top with ¼ cu. of roasted sweet potatoes
  4. Then top with 2 oz. mango sauced diced chicken
  5. Fold ends of tortilla in towards the center and roll up. Serve immediately.
