Spicy Chicken Elotes Sandwich Recipe

Spicy breaded chicken filet served on a while grain bun with a cool avocado spread and topped with a seasoned corn relish.

10 ea.Bun, Whole Wheat
10 oz.Simplot Harvest Fresh™ Avocados Chunky Avocado Pulp, Thawed

Elotes Relish
15 oz.Simplot RoastWorks® Flame-Roasted Corn & Jalapeno Blend
10 oz.Mayonnaise
5 oz.Parmesan, grated
10 tsp.Taco Seasoning
5 tsp.Sugar

Step 1 - Elotes Relish: Heat roasted corn according to package instructions. Cool corn before combining in bowl with mayonnaise, parmesan, and taco seasoning. Hold cold for cold service.

Step 2 - Pre heat convection oven to 350°F.

Step 3 - Arrange frozen chicken fillets in a single layer on a parchment lined baking sheet and heat in oven for 15-20, or until an internal temp of 165°F. Hold hot for hot service.

To serve:

  1. Open bun and spread 1 oz avocado on bottom bun.
  2. Top with spicy chicken fillet.
  3. Top with 1.5 oz. of Elotes relish.
  4. Finish with top bun and serve.
