Chopped Summer Chicken Salad

This chopped chicken salad is a great way to bring all the flavors of spring and summer to your table. It makes a great, fresh lunch or snack on the go.



Chicken Breast Ingredients

1 case, thawed                                            Tyson® All Natural,* Low Sodium, Fully Cooked, Reverse Blend, ½" Diced Chicken
¾ cupPaprika
¾ cupGarlic powder
to tasteSalt and black pepper
2 cupsOlive oil



3 headsLettuce, chopped
4 ea.Cucumber, sliced
4 ea.Avocado, sliced
¾ cupRed onions, sliced
¾ cupBacon, chopped


Salad Dressing

5 lemons            Lemon juice, freshly squeezed 
1 cups Extra virgin olive oil 
a pinch Red crushed pepper 
to taste Salt and fresh ground black pepper 
  1. In a large salad bowl, add first the lettuce, and then top it with cucumber, avocado, red onions and cooked bacon.
  2. In a mason jar, pour the lemon juice, olive oil and add salt and black pepper. Whisk everything together until combined. Taste to check the seasoning and pour over the salad.
  3. Add the diced chicken.
