Brunch for Lunch Ham Croissandwich

Buttery, flaky whole grain croissant served with thin sliced black forest chicken ham and a honey roasted apple cream cheese spread.  (Served Cold)

Ingredients

SERVES: 10

Ham Croissandwich

70 Slices Tyson® Sliced Chicken Ham, #10209800328 
10 rolls Whole Grain Croissant Roll (2 oz.), sliced 
2/3 cups Cream Cheese, Light, softened 
3/4 cups Canned Apple Slices, drained 
1 1/2 tsp Honey 
1/8 tsp Ground Cinnamon 
1 1/3 Tbsp. Lemon juice 
Directions
  1. Arrange drained apple slices in single layer - no overlap - on a sheet pan with parchment paper that is heavily sprayed with cooking oil.
  2. Cook at 400°F for 16-20 minutes or until apples have begun to soften and brown, stirring halfway through for even roasting.  Once done, set aside to cool to room temperature
  3. In a mixing bowl (preferably an electric mixer with a paddle attachment), thoroughly combine cream cheese, cooked apples, honey, cinnamon and lemon juice into a creamy spread
  4. Store under refrigeration overnight before serving
  5. Thaw Chicken Ham and separate slices for easier build

To Build the Sandwich

  1. Open croissant rolls and on bottom roll, use a #30 scoop (2 Tbsp.) to apply the apply cream cheese mixture and spread evenly
  2. Add Chicken Ham slices on top of spread
  3. Place the top roll on the sandwich and ready to serve

Chef’s Note:

Prepare cream cheese mixture a day ahead.  For hot application, separate chicken ham slices in hotel pan, cover with foil and bake for 8-10 min. at 350°F. Hold in warmer until ready to build sandwiches. When sandwiches are built, place in pan and cook, uncovered, for 3-4 min. at 350°F. Hold in warmer until ready to serve.
