Spicy Southwest Chicken Sandwich
Spicy chicken filet topped with warm queso cheese and a southwest avocado, black bean, corn and tomato salsa all served on a whole grain bun.
Spicy Southwest Chicken Sandwich

Spicy Southwest Chicken Sandwich

Whole Grain Bun, 2.0 oz.
10oz
Cayenne Pepper Hot Sauce
10 leaves
Green Leaf Lettuce
½ cup (4 oz.)
Tomato diced
2 cups (1 lb.)
Corn
2 cups (1 lb.)
Black bean
½ cup (4 oz.)
Avocado, diced
1 Tbsp + 1 tsp
Tajin Seasoning
10 oz
White Cheese Sauce
Directions
- In a mixing bowl, thoroughly combine Diced Tomatoes, Black Beans, Corn and Diced Avocado with Tajin Seasoning to create a Veggie Salsa. Let chill for 1 hour before serving.
- In a steel bowl, toss Frozen Chicken Filets with hot sauce until coated
- Place frozen sauced Chicken Filets in single layer on parchment lined sheet pan and cook at 350°F for 10-12 minutes – reached an internal temperature of 145°F. Hold in warmer until ready to build sandwiched
- Warm cheese sauce for easy application
To Build Sandwich:
- Open Bun and place Leaf of Lettuce on bottom Bun
- Place Chicken Filet on top of Lettuce
- Using a #8 scoop (1/2 cup), add the Veggie Salsa on top of the Chicken Filet
- Using a 1 oz. ladle, drizzle White Cheese Sauce over the Veggie Salsa, cover with the top Bun and serve
