Do some prep for this grilled pork tenderloin recipe, and you’ll get a ton of huge flavor. Make the brine and cover your pork with it. Meanwhile, whip up the sweet and tangy apple onion jam. Season the tenderloin with Carraway Rub and then grill it up. Serve the loins with some warm apple onion jam for a haute take on a classic dinner that will really elevate your menu.

Pork Brine

Apple Onion Jam

3 CUPS | Tart Apples, Peeled and Finely Chopped (about 2 large apples) |

Caraway Rub
Yield: 6-8 Servings

1 TBSP. | Freshly Ground Caraway |
1 TSP. | Granulated Garlic |

Step 1. Strain the brine and discard the solids. Place the pork loins in a lidded container and pour enough strained brine over to cover. Refrigerate for 4 hours.
Step 2. Combine the butter and 1 teaspoon caraway rub in a bowl.
Step 3. Remove the loins from brine and pat dry with paper towels. Discard the brine.
Step 4. Microwave the butter mixture for 30 seconds to melt and brush it on all sides of each loin.
Step 5. Dust each loin on all sides with 3 tablespoons caraway rub. Let the tenderloins sit for 30 minutes at room temperature
Pork Brine:
Step 1. In a large pot or lidded container, whisk apple juice, salt and brown sugar until dissolved.
Step 2. Stir in the remaining ingredients; cover and refrigerate 24 hours before using.
Apple Onion Jam
Step 1. In a 3-quart saucepan, heat oil and onions over medium heat. Sauté the onions until they begin to caramelize (about 7 minutes).
Step 2. Add all the remaining ingredients, cover, and reduce the heat to low. Cook 15 minutes, or until the apples are tender and mash easily with a fork.
Step 3. .Remove from the heat, uncover, and let the jam cool completely to room temperature. Refrigerate in an airtight container until ready to use.
Caraway Rub
Step 1. In a medium bowl, mix all ingredients together thoroughly. Store in an airtight container until ready to use.
