2 OZ.Southern Coleslaw (Sub Recipe)

Southern Coleslaw

YIELD: 32 OZ.

AMOUNTSUB-RECIPE INGREDIENTS
26 OZ.Green and Purple Cabbage, Shredded
4 OZ.Carrot, Shredded
2 OZ.White Onion, Chopped
8 OZ.Mayonnaise
2 OZ.Apple Cider Vinegar
2 TBSP.Dijon Mustard
2 TBSP.Sugar
1 TSP.Celery Seed
1/4 TSP.Kosher Salt
1/8 TSP.Ground Black Pepper
Directions

Step 1: Preheat oven to 375°F.

Step 2: Place bone-In wings onto a parchment foil lined sheet tray and cook for approximently 17-19 minutes. Remove from oven and hold hot for service.

Step 3: Place the sandwich onto a serving platter and cooked wings beside it.

Step 4: Place small service dishes of coleslaw and baked mac & cheese onto service platter.

Step 5: Garnish with pickle coins. Serve immediately.

Naturally Smoked BBQ Sandwich

Step 1: Preheat oven to 375°F.

Step 2: Place chicken thigh pieces onto a parchment lined sheet tray and cook for approximately 9-11 minutes. Remove from oven.

Step 3: Place burger bun onto a clean worksurface.

Step 4: Using the bottom portion of the burger bun, place warmed chicken meat across the bun.

Step 5: Top with drizzle with BBQ sauce and scoop of Southern coleslaw. Place top portion of the bun on top to close.

Step 6: Serve as needed.

Southern Coleslaw

Step 1: In a large bowl, combine the cabbage, carrot, and onion.

Step 2: In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, and celery seed until smooth and well combined.

Step 3: Pour the dressing over the vegetable mixture and toss together until well combined.

Step 4: Season with salt and black pepper, tossing the vegetables to ensure seasoning is evenly distributed.

Step 5: Cover and refrigerate for at least 1 hour before serving.
