1/8 TSP.Garlic Powder

Southern Coleslaw

YIELD: 32 OZ.

26 OZ.Green Cabbage, Finely Shredded
4 OZ.Carrot, Shredded
2 OZ.Red Onion, Chopped
8 OZ.Mayonnaise
2 OZ.Apple Cider Vinegar
2 TBSP.Dijon Mustard
2 TBSP.Sugar
1 TSP.Celery Seed
1/4 TSP.Kosher Salt
1/8 TSP.Ground Black Pepper
Directions

Step 1: Preheat oven to 375°F.

Step 2: Place bone-In chicken wings and chicken thigh pieces onto the parchment lined sheet tray. Cook for approximately 9-11 minutes then remove chicken thigh pieces from the heat, set aside and hold warm. Put the wings back into oven for an additional 8 minutes. Remove from heat and hold warm.

Step 3: Using a service platter, place the bone-In chicken wings onto the platter, displayed in a loose pile.

Step 4: On the other side of platter, add the chicken thigh pieces.

Step 5: Add small side dishes of cheesy corn, green beans, coleslaw, and baked beans to the platter.

Step 6: Pair with side of Texas toast and KC BBQ sauce. Serve immediately.

 

Sub-Recipe Directions

Kansas City-Style Cheesy Corn

Step 1: Preheat oven to 375°F.

Step 2: Melt butter in a large pan over medium heat. 

Step 3: Slowly add the flour and garlic powder over the melted butter, whisking gently but constantly as it cooks for 1-2 minutes to create a simple roux.

Step 4: Add milk and bring to a simmer, whisking constantly until liquid thickens.

Step 5: Add cheddar cheese, smoked gouda and cream cheese, stirring until fully melted and well blended into the sauce.

Step 6: Transfer to a hotel pan or casserole dish. Cover with foil and bake in preheated oven for 40-45 minutes until hot and bubbly.

Step 7: Remove from oven. Portion and serve as needed.

Southern Coleslaw

Step 1: In a large bowl, combine the cabbage, carrot, and red onion.

Step 2: In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, and celery seed until smooth and well combined.

Step 3: Pour the dressing over the vegetable mixture and toss together until well combined and evenly coated with dressing.

Step 4: Season with salt and black pepper, tossing the vegetables to ensure seasoning is evenly distributed.

Step 5: Cover and refrigerate for at least 1 hour before serving.
