Breakfast Tart Recipe

These yummy rich muffins are really somethin’. Mix thinly-cut Jimmy Dean Fully Cooked Pork Sausage Links with fresh asparagus, eggs, goat cheese, red pepper and bake this gooey goodness in pastry tarts for great morning starts. Or really, any parts of the day.

Ingredients

SERVING SIZE: 1 Serving

2 ea.

Jimmy Dean® Fully Cooked Pork Sausage Links, cut into 3rds on the bias

2 oz.

Asparagus, diced

1 oz.

Eggs, whole

1 ea.

Goat Cheese

1 oz.

Red Peppers, diced small

As needed

Pastry Dough

 

Directions

Step 1: Convection Oven 375°F.

  • From frozen, place the links on a baking sheet and heat 14-16 minutes, turning halfway through heating time.

Step 2: Once sausage links are cooled, cut thinly into small chunks and, in a large bowl, combine diced asparagus, eggs, goat cheese, red pepper and lightly fold and set aside.

Step 3: Roll out pie dough, using 3 to 4-inch biscuit batter, cut to get as many circles as possible out of the package, spray down a muffin tin with cooking spray and place the dough into each muffin slot and finish with the stuffed mixture.

Step 4: Convection oven 400°F

Place the muffin tray into the oven and cook for around 2-30 minutes, or until puffy. For the final finish, garnish with goat cheese and whole sausage links on the side (optional).
