Breakfast Bánh Mì Recipe

​​​​​Breakfast Bánh Mì is Breakfast OH MY! Build a Vietnamese fusion of crispy bread, Jimmy Dean® Sausage Patties, Wright® Naturally Hickory Smoked Extra Thick Sliced Bacon, hardboiled egg, a host of veggies, fresh herbs and a green onion aioli for breakfast so boldly.

Ingredients

2 SlicesWright® Brand Naturally Hickory Smoked Extra Thick Sliced Bacon
2 ea.Jimmy Dean® Fully Cooked Pork Sausage Patties, Frozen
1 ea.Bánh Mì Bun or Soft Torpedo Roll
2 tbsp.Green Onion Aioli (Sub-Recipe)
2 ea.Hardboiled Eggs, Peeled, Cut 1/4" Thick Slices
2 oz.Quick Pickled Carrots & Red Onion (Sub-Recipe)
1 ea.Fresh Jalapeño, Sliced 1/8" Thick Rounds
1 sliceCucumber, Cut Lengthwise, 1/8" Thick 
4 ea.Cilantro Sprigs
1 oz.Baby Arugula

Green Onion Aioli

Yield: 2.5 Cups

2 cupsMayonnaise
1 cupThinly Sliced Green Onion
1 tsp.Fresh Garlic Puree
1 tsp.Grated Ginger
3 Tbsp.Soy Sauce

Quick Pickled Carrots & Red Onions

AMOUNTSUB-RECIPE INGREDIENTS
3 cupsRice Vinegar
9 Tbsp.Sugar
3 Tbsp.Salt
1.5 lb.Red Onion, Thinly Sliced
1.5 lb.Carrot, Julienne
Directions

Step 1: Preheat convection or toaster oven to 400°F.

Step 2: Place bacon slices and sausage patties on baking sheet in a single layer. Warm in preheated oven for 12-14 minutes, flipping once halfway through.

Step 3: Toast bread in oven until edges start to crisp, about 3 minutes.

Step 4: Split bread in half lengthwise, leaving a hinge on one side. 

Step 5: Spread green onion aioli on both inner sides of bun.

Step 6: Layer bacon strips, sausage patties and egg slices onto bottom half of bun.

Step 7: Top with pickled carrots and onion, fresh jalapeño rounds, cucumber slice, cilantro sprigs and arugula. 

Step 8: Close sandwich with top half of bun and serve immediately.

Sub-Recipe Directions

Green Onion Aioli

Step 1: Combine mayonnaise, green onion, garlic, ginger and soy sauce in a medium mixing bowl, stirring until evenly mixed.

Step 2: Cover and set aside for use in larger recipe.

Quick Pickled Carrots & Red Onions

Step 1: Combine the vinegar, sugar and salt in a pot or microwave safe container.

Step 2: Heat this mixture enough to dissolve the sugar and salt.

Step 3: Add seasoned vinegar to the vegetables in a sealable container.

Step 4: Let sit at room temperature for at least 1 hour before serving.
