Breakfast Banh Mi Recipe

​​​​​Breakfast Banh Mi is Breakfast OH MY! Build a Vietnamese fusion of crispy bread, fully cooked Jimmy Dean® Sausage PattiesWright® Brand Bacon Strips, hardboiled egg, a host of veggies, fresh herbs and a green onion aioli for breakfast so boldly.

Ingredients

Banh Mi bun or soft torpedo roll, hinge cut horizontally

2 Tbsp.

Green Onion Aioli

1 slice

Wright® Brand Naturally Hickory Smoked Extra Thick Sliced Steak Cut Bacon

4 halves

Jimmy Dean® Fully Cooked Pork Sausage Patties

2 each

Eggs, hard boiled, peeled and sliced ¼ inch

2 oz.

Quick Pickled Carrots & Red Onions

1 slice

Cucumber, long slice, cut lengthwise 1/8-inch thick, 6-8 inches long

4 each

Cilantro, fresh sprigs

1 each

Jalapeno, fresh, sliced into 1/8-inch-thick rounds

1 oz.

Baby Arugula

 

 

 

Quick Pickled Carrots & Red Onions

3 cups

Vinegar, rice

9 Tbsp.

Sugar

3 Tbsp.

Salt

1.5 lb.

Red Onion, sliced thin

1.5 lb.

Carrot, fresh julienne

 

 

 

Green Onion Aioli

2 cups

Mayonnaise

1 cup

Green Onion, sliced fine

1 tsp.

Garlic, fresh pureed

1 tsp.

Ginger, fresh grated

3 Tbsp.

Soy Sauce

 

Directions

Step 1: Make the pickled carrots and red onion: combine the vinegar, sugar and salt in a pot or microwave safe container. Heat this mixture enough to dissolve the sugar and salt. Add seasoned vinegar to the vegetables in a sealable container. Let sit at room temperature for at least 1 hour before serving.  

Step 2: Combine mayonnaise, green onion, garlic, ginger and soy sauce and mix thoroughly. Cover and set aside.

Step 3: Preheat oven or toaster oven to 400°F. Heat up bacon and sausage on a baking sheet in oven until hot, flipping once halfway through cooking, about 10 minutes total.

Step 4: Warm the bread in oven until hot and crisp, about 3 minutes. Split in half lengthwise, leaving a hinge. Spread green onion aioli on both inner sides of the bun. Layer in the bacon strips, sausage patties and egg slices. Top with pickled carrots and onion, jalapeno, cucumber slice, cilantro sprigs and arugula. Cut into portions and serve immediately.
