Step 1: Preheat an oven to 400°F.
Step 2: Toss the red peppers, eggplant and red onions in the olive oil and season with salt and pepper.
Step 3: Spread the seasoned vegetables on a lined sheet pan and roast them in the oven for 15 minutes.
Step 4: Evenly spread the hummus onto two naan breads.
Step 5: Top each with half of the steak, roasted vegetables and goat cheese crumbles.
Step 6: Bake the assembled flatbreads on a sheet pan in the 400°F oven for 10 minutes.
