Seared steak piled on a scrambled egg, topped with a slice of melted American cheese and served sandwich-style on a generous, buttery biscuit.

|4 Slices||American Cheese|
|4 Ea.||Large Eggs|
|4 Ea.||Scallion Biscuits|
Step 1: Melt 1 tablespoon of butter into a medium pan over medium-high heat.
Step 2: Add the steak, searing each side for about a minute then breaking it apart with a spatula or wooden spoon until fully cooked.
Step 3: Add cheese and continue to cook until melty.
Step 4: Remove from heat and set aside.
Step 5: Melt the remaining butter over a high flame and crack eggs. Season with salt and pepper.
Step 6: Place steak mixture over the bottom halves of the biscuits and slide the eggs over.
Step 7: Cover with the top halves and serve warm.
