2 oz.Smoky Tamarind Glaze (Sub-Recipe) 
3 ea.Fresh Watermelon Wedges
1/2 tsp.Chili Lime Seasoning
2 ea.Fresh Lime Wedges, Sliced

Smoky Tamarind Glaze

YIELD: 22 OZ.

AMOUNTSUB-RECIPE INGREDIENTS
16 oz.Pineapple Juice, Prepared
4 oz.Tamarind Paste, Prepared
2 oz.Light Brown Sugar
1 tbsp.Chipotle in Adobo Paste, Pureed
Directions

Step 1: Place the prepared bone-in wings into a mixing bowl.

Step 2: Place the smoky tamarind glaze into the mixing bowl along with the wings and toss to coat.

Step 3: Place the tossed wings onto a serving plate.

Step 4: Place the watermelon sections onto the serving plate and sprinkle with chili lime seasoning.

Step 5: Place the lime wedges on to the plate.

Step 6: Serve as needed.

Fryer Instructions: Deep fry 5-6 minutes at 350°F from frozen. Fill fryer basket no more than half full. Agitate fryer basket at the midpoint of the frying time.
