Spicy Mango Chicken Bowl with Peanut Sauce

Ingredients

SERVES: 6

2 lbs.Tyson Red Label® Boneless Wings
1 fresh, about 1 in. peeled but left wholeFresh ginger
2 cupsJasmine rice, cooked
1 tsp.Olive oil
2 tsp.Tamari, divided in half
2 tsp.Peanut butter, reduced fat if available
2 tsp.Honey
2 tbsp.Lime, juiced
3 tbsp.Lite coconut milk
2 tsp.Sriracha
1 cupMango, diced
3 tbsp.Green onion, chopped
½ cupRadishes, sliced
1 cupRed cabbage, shredded
¼ cupBasil, roughly chopped or torn
Directions

Step 1

Cook Starch Coated Boneless Wing in 350 degree fryer for 4-5 minutes or until cooked through.

 

Step 2

Add piece of ginger to Jasmine rice and then cook rice according to package directions. Remove from heat and set aside. Remove ginger before serving.

 

Step 3

To make peanut sauce, combine peanut butter, honey, lime juice, coconut milk, tamari and Sriracha. Mix well.

 

Step 4

To build bowls, divide rice evenly between 2 bowls and top with mangos, chicken, onions, radishes, cabbage and peanut sauce.

 

Step 5

Garnish with basil and serve.
