|2 lbs.||Tyson Red Label® Boneless Wings|
|1 fresh, about 1 in. peeled but left whole||Fresh ginger|
|2 cups||Jasmine rice, cooked|
|1 tsp.||Olive oil|
|2 tsp.||Tamari, divided in half|
|2 tsp.||Peanut butter, reduced fat if available|
|2 tbsp.||Lime, juiced|
|3 tbsp.||Lite coconut milk|
|1 cup||Mango, diced|
|3 tbsp.||Green onion, chopped|
|½ cup||Radishes, sliced|
|1 cup||Red cabbage, shredded|
|¼ cup||Basil, roughly chopped or torn|
Cook Starch Coated Boneless Wing in 350 degree fryer for 4-5 minutes or until cooked through.
Add piece of ginger to Jasmine rice and then cook rice according to package directions. Remove from heat and set aside. Remove ginger before serving.
To make peanut sauce, combine peanut butter, honey, lime juice, coconut milk, tamari and Sriracha. Mix well.
To build bowls, divide rice evenly between 2 bowls and top with mangos, chicken, onions, radishes, cabbage and peanut sauce.
Garnish with basil and serve.
