Blue Cheese Sauce

Garlic Parmesan Steak Fries
YIELD: 12 OZ.

| 1/2 tsp. | Kosher Salt |
Step 1: Preheat frying oil to 350°F.
Step 2: From frozen, place chicken in fryer basket, submerge in oil, and shake basket. (Do NOT over pack in basket.) Cook for 6-7 minutes, shaking the basket occasionally during cooking to ensure internal temperature reaches 165°F. Remove from fryer and hold warm.
Step 3: Using a clean work surface, stack each skewer with three chicken chunks and two pickle coins, interchanging ingredients so they are stacked.
Step 4: Once skewers are complete, place them onto a serving dish with garlic parmesan fries and a ramekin of blue cheese sauce.
Step 5: Serve immediately.
Blue Cheese Sauce
Step 1: In a medium saucepan, melt the butter over medium heat.
Step 2: Once the butter is melted, add the flour and whisk continuously for about 1-2 minutes to form a roux. This will help thicken the sauce.
Step 3: Slowly pour in the heavy cream while whisking constantly to avoid lumps. Continue to whisk until the mixture is smooth and begins to thicken, about 3-4 minutes.
Step 4: Reduce heat to low and add the crumbled blue cheese to the saucepan. Stir until the cheese is melted and well incorporated into the sauce.
Step 5: Add the Dijon mustard, Worcestershire sauce, and garlic powder. Stir to combine.
Step 6: Season with salt and pepper.
Step 7: Remove saucepan from heat and allow sauce cool slightly before serving. The sauce will thicken as it cools.
Step 8: Gently fold in chopped parsley.
Step 9: Serve as needed.
Garlic Parmesan Steak Fries
Step 1: Cook fries according to manufactures instructions.
Step 2: While the fries are cooking, melt the butter in a small saucepan over medium heat.
Step 3: Add minced garlic to the melted butter and sauté for 1-2 minutes, or until fragrant.
Step 4: Once the fries are done cooking, remove them from the fryer and transfer to a large mixing bowl.
Step 5: Pour garlic butter over the fries and toss to coat evenly.
Step 6: Add grated Parmesan cheese and toss again until well coated.
Step 7: Remove from mixing bowl and use as needed.
