Pulled Chicken Pan Sandwich

A Central American inspired pulled chicken sandwich topped with Cole slaw, spinach, radishes, cucumbers --all in a fresh baked bolillo roll.

Ingredients

SERVES: 1

4 oz.Tyson® Fully Cooked Boneless, Skinless, Low Sodium Pulled White Chicken
4 oz.Red sauce, commercially prepared
1 eachBolillo Roll
1 pieceSpinach
2-4 slicesCucumbers
2-4 slicesRadishes
1 Tbsp.Light Mayo
2 oz.Cole Slaw Mix
As neededCarrots, julienne

 

Directions

1.    In a large pot, add the red sauce and ingredient chicken and bring to a light simmer. 
2.    For the Cole slaw, add the pre-shredded mix, carrots, and light mayo into a bowl. Mix the ingredients together and set aside. 
3.    To build the dish, first grab a warm bolillo roll and spread it with the light mayo. Then, layer the sauced ingredient chicken, Cole slaw, radishes, cucumbers, and spinach into the roll and serve.
