A Central American inspired pulled chicken sandwich topped with Cole slaw, spinach, radishes, cucumbers --all in a fresh baked bolillo roll.

4 oz. | Tyson® Fully Cooked Boneless, Skinless, Low Sodium Pulled White Chicken |
4 oz. | Red sauce, commercially prepared |
1 each | Bolillo Roll |
1 piece | Spinach |
2-4 slices | Cucumbers |
2-4 slices | Radishes |
1 Tbsp. | Light Mayo |
2 oz. | Cole Slaw Mix |
As needed | Carrots, julienne |
1. In a large pot, add the red sauce and ingredient chicken and bring to a light simmer.
2. For the Cole slaw, add the pre-shredded mix, carrots, and light mayo into a bowl. Mix the ingredients together and set aside.
3. To build the dish, first grab a warm bolillo roll and spread it with the light mayo. Then, layer the sauced ingredient chicken, Cole slaw, radishes, cucumbers, and spinach into the roll and serve.
