Chipotle Maple Glaze
Yield: 32 OZ.

6 Cups | Maple Syrup |
1 1/2 cups | Chipotle puree, prepared |
3/4 cup | Brown Sugar |
3/4 cup | Dijon Mustard |
4 tbsp. | Apple Cider Vinegar |
2 tbsp. | Garlic powder |
1 tbsp. | Salt |
1 tbsp. | Black Pepper |
Step 1: Pre heat convection oven to 350°F and lay bacon flat in one layer on a sheet tray with a rack. Cook until crispy.
Step 2: Remove bacon from oven and glaze with spicy maple glaze while cooling.
Step 3: Toast bread and spread aioli on both slices. Plate lettuce on bottom slice, the tomato, and glazed bacon.
Step 4: Finish with top slice and serve fresh.
Chipotle Maple Glaze
Step 1: Mix all ingredients together in a sauce pot and cook over medium low heat. Bring to a low simmer and reduce by 30% or until syrupy and you have 4 qt of final product.
Spicy Maple Ailoli
Step 1: Combine all ingredients in a food processor and blend until smooth.
Step 2: Hold cold for cold service.
