Served with chipotle-lime crema for dipping and sides of cotija crumbles, freshly sliced jalapeño and lime wedges for an extra burst of flavor.

Chili-Lime Seasoned Fries
YIELD: 6 OZ.

Step 1: Preheat convection oven to 375°F.
Step 2: Place chicken pieces in a single layer on a parchment lined sheet pan. Place the sheet pan into the oven for 9-10 minutes. Remove from heat and hold warm.
Step 3: Place chili-lime seasoned fries on one side of service dish. Squeeze the juice of 1 lime wedge over top of fries. Place remaining wedges in side cup for service and set aside.
Step 4: Place cooked tenders in service dish, on side without fries. Garnish tenders with sprinkle of cotija cheese and cilantro.
Step 5: Pair plate with side cups of elote, chipotle lime crema, cotija cheese, and lime wedges.
Step 6: Garnish with fresh jalapeño slices. Serve immediately.
Alternate Directions: Chicken Tenders - Heat oil in deep fryer to 350°F. Cook tenders, from frozen, for 3:30-4:30 minutes. Remove from heat and hold warm for service.
Elote
Step 1: In a medium mixing bowl, add mayonnaise, crema (or sour cream), lime juice, salt and garlic powder and stir until well combined.
Step 2: Add grilled corn kernels; toss until well coated in sauce.
Step 3: Fold in cotija cheese.
Step 4: Transfer mixture to service side dish.
Step 5: Sprinkle with chili-lime seasoning and garnish with chopped cilantro.
Step 6: Serve as needed.
Chili-Lime Seasoned Fries
Step 1: Sprinkle freshly cooked fries with chili-lime seasoning. Toss to coat evenly.
Step 2: Sprinkle salt and sugar evenly over top of fries.
Step 3: Hold hot for service.
