Crispy Chicken & Sweet Potato Hash Recipe

Sweet Potato Hash

YIELD: 24 OZ.

AMOUNTSUB-RECIPE INGREDIENTS
12 oz.Sweet Potatoes, Diced, 1" Cubes
4 oz.Red Onion, Sliced
4 oz.Red Bell Peppers, Sliced
3 oz.Baby Kale Leaves
2 tbsp.Olive Oil
1/2 tsp.Garlic Powder
1/2 tsp.Smoked Paprika
1/2 tsp.Dried Thyme
1/4 tsp.Kosher Salt
1/4 tsp.Ground Black Pepper

Hot Honey Maple Sauce

YIELD: 16 OZ.

AMOUNTSUB-RECIPE INGREDIENTS
8 oz.Honey
6 oz.Pure Maple Syrup
1 1/2 tbsp.Hot Sauce, Prepared
1 tbsp.Apple Cider Vinegar
1/2 tsp.Ground Cayenne Peppper
1/4 tsp.Kosher Salt
Directions

Step 1: Preheat frying oil to 350°F.

Step 2: From frozen, place chicken in fryer basket, submerge in oil, and shake basket. (Do NOT over pack in basket.) Cook for 6-7 minutes, shaking the basket occasionally during cooking to ensure internal temperature reaches 165°F. Remove from fryer and hold warm.

Step 3: To plate, place the sweet potato hash into bottom of service dish.

Step 4: Top the sweet potato hash with one sunny-side-up egg, chicken chunks and sliced avocado.

Step 5: Sprinkle dish with salt and ground black pepper (to taste).

Step 6: Pair with a side of hot honey maple sauce.

Step 7: Serve immediately.

 

 

Sub-Recipe Directions

Sweet Potatoe Hash

Step 1: Preheat convection oven to 425°F

Step 2: In a large bowl, toss the diced sweet potatoes, red onions, bell peppers and kale with olive oil, garlic powder, smoked paprika, dried thyme, salt, and pepper until evenly coated.

Step 3: Spread the seasoned vegetables in a single layer on a parchment paper lined baking sheet.

Step 4: Roast for 20-25 minutes, or until the sweet potatoes are tender and slightly crispy on the edges, stirring halfway through.

Step 5: Remove the baking sheet from the oven and transfer the roasted vegetables to a serving dish.

Step 6: Serve warm as needed.

 

Hot Honey Maple Sauce

Step 1: In a small saucepan over medium heat, combine the honey, maple syrup, hot sauce, apple cider vinegar, cayenne pepper and salt. Stir until well combined.

Step 2: Bring the sauce to a gentle simmer, stirring occasionally. Allow it to simmer for about 2-3 minutes.

Step 3: Remove the saucepan from the heat and let the sauce cool slightly before serving. The sauce will thicken as it cools.

Step 4: Use as needed.
