Savory Lemon Ricotta

| 2 cu. | Whole Milk Ricotta |
| 2 Tbsp. | Lemon Juice |
| 1 tsp. | Thyme, fresh, picked |
| 1/2 tsp. | Black Pepper, cracked |
| 1 tsp. | Salt |
Step 1: In a saute pan or on a flat top grill over medium heat, add oil then saute shallots and garlic until fragrant. Add orange zest, then chicken, and cook until hot all the way through and lightly caramelized; 3-4 minutes
Step 2: Remove meat from the heat and set aside.
Step 3: Pre-heat convection oven to 375°F, toast flat bread 3-5 minutes or until pliable. Remove from the oven.
Step 4: Spread lemon ricotta over the top evenly, then spoon the warm chicken mixture over the ricotta.
Step 5: Drizzle fig jam across the top.
Step 6: Return the assembled flat bread to the oven for an additional 3-4 minutes to warm all the ingredients thru and slightly melt the ricota.
Step 7: Top with baby mustards, parley leaves, and fired sage.
Step 1: Combine all ingredients in a food processor and pulse until smooth.
Step 2: Chill for 15-30 minutes before serving to let flavors meld.
