Chicken Fajita Baja Bowl Recipe

Enjoy fresh-off-the-grill flavor with Tyson Red Label® Fajita Seaoned Chicken Breast Strips. Add lettuce, onions, and your favorite salsa to serve up a delicious fajita bowl.

4 OzBlend, Rice, Brown, Quinoa, Ckd (Commercially Prepared)
1 OzVinagrette, Cilantro, Lime (Commercially Prepared)
2 OzLettuce, Romaine, Chpd, 1 inch
2 OzMix, Black Bean, Rstd Corn, Ckd (Commercially Prepared)
4 OzTyson Red Label® Fully Cooked Unbreaded Fajita Seasoned Chicken Breast Strips, Large (Chopped & Formed)
5 Ea.Tomatoes, Cherry, Hlvs
1 OzOnions, Red, Pickled (Commercially Prepared)
1 TbspCheese, Queso Fresco, Crumbled
2 OzSalsa, Pico de Gallo (Commercially Prepared)

Directions

Step 1: Pre-heat oven at 350 degrees F.

Step 2: Place Tyson Red Label® Grilled Chicken Breast Strips onto a parchment lined sheet pan.

Step 3: Cook for approximately 12-15 minutes and internal temperature reaches 165 degrees F.

Step 4: Remove from oven and hold.

Step 5: Reserve

To assemble:

Step 1: Place warm brown rice quinoa blend and cilantro lime vinaigrette into a mixing bowl and toss to combine.

Step 2: Place a serving bowl onto a clean work surface.

Step 3: Remove prepared brown rice quinoa mix from mixing bowl and place into a serving bowl.

Step 4: Top with romaine lettuce and warm black bean corn mix.

Step 5: Place the Tyson Red Label® Grilled Chicken Breast Strips onto the center of the bowl.

Step 6: Garnish bowl with cherry tomatoes, pickled red onions and queso fresco.

Step 7: Serve as needed with Pico de Gallo on the side.
