Calabrain Tomato Sauce
YIELD: Approximately 1 Cup (about 4 Portions at 1/4 Cup Each)

Step 1: Cook the pork crumbles in a cast-iron skillet, then add the tomato sauce and bring to a simmer.
Step 2: Crack the egg into the center of the skillet.
Step 3: Arrange the mozzarella slices around the egg, then bake in the oven at 350°F until the egg is cooked to sunny-side-up.
Step 4: Once out of the oven, finish with torn fresh basil.
Step 5: Serve with sliced whole-wheat crusty bread

Step 1: In a skillet, cook the diced onions in the olive oil until soft.
Step 2: Add the minced garlic and chili paste, cooking for 1 minute.
Step 3: Stir in the crushed tomatoes and let simmer for 10 minutes. Add salt and pepper to taste.
