Breakfast Steak & Egg Burrito

Wonderful way to start the day with a steak & egg burrito with a freshly made pico of diced tomatoes, white onions, lime juice and pulled cilantro leaves. Served with a smear of a bright serrano-lime guacamole




3 oz.Shaved Steak, cooked and seasoned
2 ea.Eggs, Scrambled
1 ea.Wrap, Whole Wheat
2 Tbsp.Tomatoes, fresh, small dice
1 Tbsp.Onions, White, small dice
1 tsp.Cilantro leaves, fresh
1 tsp.Lime juice
OptionalChili sauce
1 oz.Serrano-Lime Guacamole
  1. Place fired warmed wrap on cutting board and place the scrambled eggs down the center half.

  2. Top with cooked and seasoned shaved steak.

  3. Add the fresh tomatoes, onions, cilantro leaves, and lime juice.

  4. Smear the serrano-lime guacamole just under/next to the small pile of topped steak & eggs.

  5. Wrap like a burrito.  Slice on a bias and serve.


CREATIVE POSSIBILITIES: Good opportunity to add different types of potatoes and a stretcher or even beans/refried beans.  Swap out the scrambled egg for a fried egg and this burrito has the ability to jump dayparts moving from lunch to dinner to late-nite.
