Applewood Smoked Bacon Chilaquiles Recipe

Salsa Criolla

Yield: 9 Oz.

4 Oz.Onion, Red, Halved, Sliced Thin 
2 Oz.Bell Pepper, Cored, Seeded, Sliced Thin 
1 Ea.Chili, Serrano, Minced
2 Tbsp.Juice, Lime, Fresh, Squeezed
2 Tbsp.Cilantro, Fresh, Chopped
1/4 Tsp.Salt, Kosher 
Directions

Step 1. Heat a sauté pan over medium-high heat.

Step 2. Place diced Wright® Brand Naturally Applewood Smoked Thick Sliced Bacon into sauté pan.

Step 3. Sauté diced Wright® Brand Naturally Applewood Smoked Thick Sliced Bacon until crispy.

Step 4. Add in ranchero sauce to the sauté pan with Wright® Brand Naturally Applewood Smoked Thick Sliced Bacon.

Step 5. Bring to a simmer and fold in Mexican Original® Yellow Tortilla Chips.

Step 6. Gently toss all ingredients together.

Step 7. Remove from sauté pan and place onto a serving dish.

Step 8. Garnish with radish, queso fresco, and avocado. 

Step 9. Drizzle entire dish with tomatillo-serrano crema.

Step 10. Top with sunny-side up eggs.

Step 11. Place salsa criolla on top of sunny-side up eggs.

Step 12. Serve as needed.

Sub-Recipes Directions

Ranchero Sauce

Step 1. Heat a large pan to medium-high heat and add the canola oil.

Step 2. Cook the onions and peppers down about 5 minutes to soften.

Step 3. Add the garlic and cook another minute, stirring a bit.

Step 4. Add the tomato and chicken broth. Stir.

Step 5. Stir in the cilantro and seasonings.

Step 6. Bring to a quick boil then reduce the heat and simmer for 20-25 minutes to let the flavors develop.

Step 7. Transfer the mixture to a blender or food processor and pour in the lime juice.

Step 8. Process until nice and smooth.

Step 9. Remove from food processor.

Step 10. Serve as needed.

Tomatillo-Serrano Crema

Step 1. Place all ingredients into a food processor.

Step 2. Process all ingredients until smooth.

Step 3. Remove from food processor.

Step 4. Serve as needed.

Salsa Criolla

Step 1. Place all ingredients into a mixing bowl.

Step 2. Gently fold all ingredients together.

Step 3. Remove from bowl.

Step 4. Serve as needed.
