Fried Green Tomato B.L.T. Recipe

1/4 oz.Baby Arugula Leaves

Oregano Pesto Sauce

Yield: 1 CUP

3 ea.Cloves Garlic
1/4 cupPine Nuts
2 cupsBasil Leaves
1 oz.Feta Cheese Crumbles
1/4 cupOregano Leaves
2 Tbsp.Lemon Juice
1/4 tsp.Kosher Salt
4 oz.Extra Virgin Olive Oil
Directions

Step 1: Preheat a convection oven to 400°F.

Step 2: Place bacon in single layer on parchment paper lined baking sheet.

Step 3: Cook bacon for 15-30 minutes or until desired crispiness is achieved, flipping halfway through.

Step 4: Transfer the cooked bacon to paper towel-lined plate.

Step 5: Brush inner sides of sliced whole wheat bun with bacon fat drippings and toast or griddle until the surface and edges develop a golden crispiness.

Step 6: Spread oregano pesto on bottom half of bun, followed by fried green tomatoes, bacon slices, and arugula. 

Step 7: Close sandwich with top half of bun, plate, and serve immediately.

Sub-Recipe Directions

Oregano Pesto Sauce

Step 1: Add all ingredients except olive oil into a food processor. Pulse until finely chopped, slowly drizzling in olive oil while pulsing until ingredients are chunky and oil is evenly distributed.

Step 2: Cover and set aside for later use in sandwich assembly.
