Re-imagine a classic, crowd favorite and make this B.L.T. next level. Fried green tomatoes, arugula leaves, oregano pesto and hearty Wright® Brand Steak Cut Bacon are layered on whole wheat grain bread slices. It’s a fresh spin on a classic sandwich.
Wright® Brand Naturally Hickory Smoked Thick Sliced Bacon
Serving Amount – 1 Sandwich
|3 slices||Wright® Brand Naturally Hickory Smoked Extra Extra Thick Sliced Steak Cut Bacon|
|2 slices||Seeded Whole Wheat/Grain Bread Loaf, ½” slices, toasted|
|3 to 4 (depending on diameter)||Fried Green Tomatoes (prepared)|
|¼ oz.||Arugula leaves, baby|
|1 ½ oz.||Oregano Pesto (see sub-recipe)|
|3 ea.||Cloves Garlic, unpeeled|
|¼ cup||Pine Nuts|
|2 cups (by volume)||Basil Leaves, fresh|
|1 oz.||Feta Cheese, crumbles|
|¼ cup (by volume)||Oregano Leaves, fresh|
|2 Tbsp.||Lemon Juice, fresh|
|½ tsp.||Salt, Kosher|
Step 1 – Cook off the Wright® Brand Bacon according to the directions on the master case. Reserve Hot *Note: save bacon fat.
Step 2 – Toast or griddle the seeded bread slices using the reserved bacon fat. You can also fry your green tomatoes in the bacon fat if you chose.
Step 3 - Place a slice of bread on a plate or cutting board. Top with fried green tomatoes and spread with the oregano pesto.
Step 4 - Top the pesto with the Wright® Brand Bacon slices. Finish with the fresh baby arugula leaves.
Step 5 - Place the other slice of toasted/griddled bread on top and insert toothpick or slice.
