Chorizo Breakfast Tacos

Savory breakfast tacos made with Jimmy Dean® Pork Chorizo Sausage Patties, scrambled eggs, cheese, pickled jalapeños, pico de gallo and a sour cream drizzle.

Ingredients

SERVES: 3 TACOS

3 eachJimmy Dean® Pork Chorizo Sausage Patties, cooked and cut into quarters.
3 eachCorn tortillas
3 eachEggs, scrambled
2.25 ozCheddar cheese, shredded
9 eachPickled jalapeños, slices
3 TbspPico de gallo
3 tspSour cream
1 TbspCilantro leaves, fresh, chopped
3 eachLime, wedges
Directions

Step 1

Heat the Jimmy Dean® Sausages. Reserve.

Step 2

In a small skillet melt butter, add eggs and scramble. Once nearly done, add Cheddar cheese and cook until melted.

Step 3

Place 3 corn tortillas on a plate and add eggs to each tortilla.

Step 4

Add the cooked and cut Jimmy Dean® Sausages, pico de gallo. Drizzle with sour cream and top with 3 jalapeño slices. Garnish with chopped cilantro.

Step 5

Serve with a wedge of lime.
