Grilled Peach Burrata Salad Recipe

A seasonal showstopper! A Tyson Red Label® Fully Cooked Unbreaded Roasted Chicken Breast Filet and grilled peach wedges are placed on a bed of a fresh arugula and spring mix—complemented with creamy burrata cheese, ripe heirloom tomatoes and fresh basil, finished with a balsamic-bacon vinaigrette.

1 eaTyson Red Label® Fully Cooked Unbreaded Roasted Chicken Breast Filet, 4 oz.
2 oz.Arugula
2 oz.Spring Mix
1 oz.Heirloom Tomatoes
GarnishBasil - Fresh
1/2 oz.Burrata Cheese
3 ea.Grilled Peach Wedges
DrizzleBalsamic-Bacon Vinaigrette (Commercially Prepared)
Directions

Step 1: Convection Oven: Place frozen Tyson Red Label® Fully Cooked Unbreaded Roasted Chicken Breast Filet on a lined (non-stick) baking sheet with a small amount of water. Cover product with foil. Bake at 350°F until internal temperature reaches 145°F, approximately 17-21 minutes

Step 2: Slice into strips and set aside. 

Step 3: Combine arugula, spring mix, heirloom tomatoes, basil and burrata cheese; place in serving bowl and top with chicken strips.

Step 4: Garnish with grilled peach wedges and drizzle of balsamic-bacon vinaigrette. Serve immediately.
