Chorizo Tamale

Diced chorizo sausage, potatoes, sweet corn and green onions served over a spread of fresh salsa.

Ingredients

Step 1

2 ouncesHILLSHIRE FARM®Diced Chorizo Sausage, Fully Cooked
1 ozSweet corn
2 tspsVegetable oil

1/2 tspCilantro
2 tspsGreen onions
2 ouncesPotatoes

 

Step 3

eachCorn tortilla
1 ozSlaw

1 ozSauce
Directions

Step 1

Place a small sauté pan over medium-high heat and add Diced Chorizo Sausage and vegetable oil. Cook while stirring until sausage begins to brown, then add sweet corn.

 

Step 2

Sauté until corn begins to brown, then add potatoes, chopped cilantro and green onions, toss gently to mix thoroughly.

 

Step 3

Fill corn tortilla cone with sausage mixture and top with lime dressed cabbage slaw

 

Step 4

Spoon or drizzle the tomato-chili sauce over and serve immediately.
