Smoked Sausage Trio

A trio of a naturally hardwood smoked sausages: Polska sausage over caramelized onion jam, a flavorful smoked sausage served with a cherry-caramelized onion chutney, and a bold smoked Cajun style Andouille sausage with a marinated and oven roasted roma tomato.



4 ozSmoked Sausage, fully cooked
½ CFresh or Frozen Black Cherry (thaw and strain if Frozen), pitted
1 CJulienne Spanish onion
½ ozOlive oil
1 ozBourbon
2 ozChicken stock
½ tbspWhole butter
To TasteSalt and pepper

Bourbon Infused Black Cherry- Caramelized Onion Chutney

  • Caramelize onions in medium sauté pan.
  • Add black cherry halves to re-therm.
  • Add bourbon and flame off the excess alcohol and reduce to au sec.
  • Add chicken stock and reduce to approximately ¾
  • Add whole butter to smooth the sauce.
