Cilantro Lime Aioli
Yield: 24 oz.

2 cup | Mayonnaise |
1/2 cup | Cilantro, chopped |
1 tbsp. | Garlic, minced |
1 tbsp. | Lime Juice |
1 tsp | Lime Zest |
1/2 tsp. | Salt |
Step 1: Preheat fryer to 350F. Deep fry chicken breast chunks for 5 -7 minutes or until internal temperature reaches a minimum of 140F. Hold hot for service.
Step 2: On a grill over high heat, lightly grill pineapple for color, being careful not to overcook it.
Step 3: Build skewers in this order: chicken breast chunks, grilled pineapple, red bell pepper, purple onion and repeat until all of the skewers are built.
Step 4: Place cilantro lime aioli in 4 oz. sauce dish and plate on larger platter.
Step 5: Garnish with fresh cilantro and lime wedges before serving.
Cilantro Lime Aioli
Step 1: Combine all ingredients in the bowl of a food processor and pulse until smooth.
Step 2: Store in an air tight container and chill for service.
