Aloha Honey Chicken Bowl Recipe

Say "aloha" to a bowl of pure paradise! Sweet, savory and a little crispy, this island-inspired creation brings a tropical vibe to every bite. Dive into the perfect blend of honey chicken breast chunks, grilled pineapple and a kiss of sesame ginger.

AMOUNTMAIN INGREDIENTS
6 oz.Pineapple Fried Rice (Sub Recipe)
4 oz.Tyson® Honey Stung® Fully Cooked Lightly Breaded Original Honey Chicken Breast Chunks
2 oz.Broccolini, blanched
1 oz.Carrot, shredded
1 oz.Edamame, fresh, shelled
1 oz.Purple Cabbage, shaved
2 oz.Pineapple, slices, grilled
1 oz.Wonton, julienne, fried
1 oz.Sesame Ginger Dressing, prepared

Pineapple Fried Rice

Yield: 32 oz.

AMOUNTSUB-RECIPE INGREDIENTS
2 cupCooked rice, long grain, (preferably day-old)
1 cupPineapple, fresh, diced
1 tbsp.Canola Oil
2 tbsp.Scallion, white, sliced thin
1 tbsp.Garlic, minced
1 tbsp.Ginger, grated
1/2 cupRed Bell Pepper, small dice
2 tbsp.Soy Sauce
1 tbsp.Lime Juice, fresh
1 tsp.Curry Powder
2 tbsp.Scallion, greens, sliced thin
1/4 cupCashew, roasted, split
2 tbsp.Cilantro, fresh
Directions

Step 1: Preheat fryer to 350°F. Deep fry chicken breast chunks 5 -7 minutes or until internal temperature reaches a minimum of 140°F. Hold hot for service.

Step 2: Plate pineapple fried rice in bottom of bowl, then place grilled pineapple and broccolini off center.

Step 3: Toss chicken breast chunks in sesame ginger dressing and plate over fried rice left of center.

Step 4: Garnish with cabbage, crispy wonton skins,  edamame and carrots. 

Step 5: Serve warm.

Pineapple Fried Rice

Step 1: Heat oil in a large skillet over high heat until it begins to smoke.

Step 2: Quickly add scallion whites, garlic, and ginger to the pan. Cook 1-2 minutes, shaking pan frequently.

Step 3: Add bell peppers to the pan and continue to cook on high moving the pan frequently for another 1-2 minutes. 

Step 4: Add cooked rice to the skillet, breaking up any clumps and stir fry for 2-3 minutes. Fold in pineapple.

Step 5: Add the soy sauce, curry powder, and lime juice. Toss the pan to coat the rice well.

Step 6: Fold in scallion greens, cashews, and chopped cilantro.

Step 7: Serve warm.
