Pollo Bianca Pizza Recipe

A golden crust topped with preserved lemon cream sauce and melted mozzarella. Layered with tender Original Philly® Fully Cooked Sliced Chicken, fresh basil leaves and shaved pecorino cheese. Finished with a drizzle of extra virgin olive oil and a sprinkle of sea salt flakes for a vibrant, flavorful bite.

1 ea.16" Oven Rising Sheeted Pizza Dough, Thawed
3 oz.Preserved Lemon Cream Sauce  (Sub-Recipe)
8 oz.Mozzarella Cheese, Shredded
12 oz.Original Philly® Fully Cooked Sliced Chicken
1 cupFresh Herb Basil, Picked
1 cupPecorino Cheese, Shaved
3 oz.Extra Virgin Olive Oil
2 tsp.Sea Salt Flakes

Preserved Lemon Cream Sauce

YIELD: 8 OZ.

AMOUNTSUB-RECIPE INGREDIENTS
8 oz.Alfredo Sauce (Commercially Available)
1 ea.Garlic Clove, Minced
2 tbsp.Lemon Rind, Preserved, Chopped, Fine
1 tsp.Lemon Juice, Preserved
1/4 tsp.White Pepper, Ground
1/4 tsp.Kosher Salt
2 tsp.Onion Chive, Sliced Thin
Directions

Step 1: Preheat impinger oven to 475°F.

Step 2: Remove pizza dough from cooler and place onto a clean work surface.

Step 3: Spread preserved lemon cream sauce evenly over crust from edge to edge. 

Step 4: Top preserved lemon cream sauce with shredded mozzarella cheese.

Step 5: Spread sliced chicken on top of cheese evenly around entire pizza.

Step 6: Transfer the assembled pizza onto a pizza screen and slide it into the impinger oven.

Step 7: Cook for approximately 6 minutes and 15 seconds.

Step 8: Remove from oven and place pizza onto a cutting board.

Step 9: Cut pizza into slices and place fresh basil and pecorino cheese over the entire pizza.

Step 10: Drizzle the entire pizza with olive oil and sea salt flakes.

Step 11: Serve as needed.

Step 1: Place all ingredients into a mixing bowl.

Step 2: Mix all ingredients together to well combined.

Step 3: Remove from mixing bowl.

Step 4: Use as needed.
