A mountain of golden, seasoned tots piled high with savory beef taco meat, drenched in warm nacho cheese and finished with a zesty drizzle of creamy Caliente Aji Amarillo sauce—vibrant, tasty and just the right kind of heat. Topped with fresh cilantro and a crunchy crown of tortilla strips.

Creamy Aji Amarillo Caliente Sauce

Serving Amount: 16 OZ.

8 oz.Mayonnaise, Light, Prepared
8 oz.Cream, Sour Cream, Prepared
2 tbsp.Paste, Aji Amarillo, Prepared
3 tbsp.Juice, Jalapeno, Pickled (from a jar of pickled jalapenos)
3 tbsp.Jalapenos, Pickled, Diced
2 tsp.Seasoning, Paprika, Ground
2 tsp.Seasoning, Cumin, Ground
1 tsp.Seasoning, Garlic, Granulated
1 tsp.Seasoning, Onion, Powder
1/2 tsp.Seasoning, Salt, Kosher
1/2 tsp.Seasoning, Chili Powder, Ground

Tamarind Pasilla Tortilla Strips

Serving Amount: 3.5 OZ.

3.5 oz.Tortilla, Strips, Prepared
1 tsp.Seasoning, Tamarind Pasilla Chile, Blend
 
Directions

Step 1: Day before service, thaw taco meat in refrigerator.

Step 2: Preheat tots according to manufactures instructions and reserve.

Step 3: Preheat White Cheese Sauce according to manufactures instructions and reserve.

Step 4: Preheat steamer to 210°F, (medium fans)

Step 5: Place the thawed AdvancePierre™ Beef Taco Meat in a hotel pan and steam heat product to 165°F as measured using a food thermometer.

Step 6: Remove from the steamer and reserve warm.

Sub-Recipe Directions

Creamy Aji Amarillo Caliente Sauce

Step 1: Place all the ingredients into a food processor.

Step 2: Process all ingredients together until well combined.

Step 3: Remove from the food processor and place it into a clean container.

Step 4: Use as needed.

Chef’s Note: Sauce can be made 1-5 days ahead of time.  Store in a sealed container in the refrigerator until needed.  

Tamarind Pasilla Tortilla Strips

Step 1: Place all the ingredients into a mixing bowl.

Step 2: Toss all ingredients together until well combined.

Step 3: Remove from mixing bowl and place it into a clean container.

Step 4: Use as needed.

Plating Direction

Step 1: Place tots into a serving bowl.

Step 2: Drizzle tots with warm white cheese sauce.

Step 3: Top with AdvancePierre™ Beef Taco Meat.

Step 4: Drizzle Aji Amarillo Caliente sauce over the entire bowl.

Step 5: Top with Tamarind Pasilla Chile seasoned tortilla strips and cilantro.

Step 6: Serve as needed.
