Creamy Aji Amarillo Caliente Sauce

Step 1: Day before service, thaw taco meat in refrigerator.
Step 2: Preheat tots according to manufactures instructions and reserve.
Step 3: Preheat White Cheese Sauce according to manufactures instructions and reserve.
Step 4: Preheat steamer to 210°F, (medium fans)
Step 5: Place the thawed AdvancePierre™ Beef Taco Meat in a hotel pan and steam heat product to 165°F as measured using a food thermometer.
Step 6: Remove from the steamer and reserve warm.
Creamy Aji Amarillo Caliente Sauce
Step 1: Place all the ingredients into a food processor.
Step 2: Process all ingredients together until well combined.
Step 3: Remove from the food processor and place it into a clean container.
Step 4: Use as needed.
Chef’s Note: Sauce can be made 1-5 days ahead of time. Store in a sealed container in the refrigerator until needed.
Tamarind Pasilla Tortilla Strips
Step 1: Place all the ingredients into a mixing bowl.
Step 2: Toss all ingredients together until well combined.
Step 3: Remove from mixing bowl and place it into a clean container.
Step 4: Use as needed.
Step 1: Place tots into a serving bowl.
Step 2: Drizzle tots with warm white cheese sauce.
Step 3: Top with AdvancePierre™ Beef Taco Meat.
Step 4: Drizzle Aji Amarillo Caliente sauce over the entire bowl.
Step 5: Top with Tamarind Pasilla Chile seasoned tortilla strips and cilantro.
Step 6: Serve as needed.
