Heat water to boil. Add hot dogs and simmer until internal temperature of 140°F is reached.
Pre-heat roller grill on medium for 15-20 minutes. Cook hot dog to internal temperature of 140°F.
Prepare steam table pan. Place single layer of hot dogs in pan, close door. Steam until internal temperature of 140°F is reached.
