Spicy Mango Chicken Bowl with Peanut Sauce Ingredients

1 fresh, about 1 in. peeled but left whole

Fresh ginger

2 cups

Jasmine rice, cooked

1 tsp.

Olive oil

2 tsp.

Tamari, divided in half

2 tsp.

Peanut butter, reduced fat if available

2 tsp.

Honey

2 tbsp.

Lime, juiced

3 tbsp.

Lite coconut milk

2 tsp.

Sriracha

1 cup

Mango, diced

3 tbsp.

Green onion, chopped

½ cup

Radishes, sliced

1 cup

Red cabbage, shredded

¼ cup

Basil, roughly chopped or torn

Directions

Step 1

Cook Starch Coated Boneless Wing in 350 degree fryer for 4-5 minutes or until cooked through.

 

Step 2

Add piece of ginger to Jasmine rice and then cook rice according to package directions. Remove from heat and set aside. Remove ginger before serving.

 

Step 3

To make peanut sauce, combine peanut butter, honey, lime juice, coconut milk, tamari and Sriracha. Mix well.

 

Step 4

To build bowls, divide rice evenly between 2 bowls and top with mangos, chicken, onions, radishes, cabbage and peanut sauce.

 

Step 5

Garnish with basil and serve.
