Serve Luxury and Elevate Presentation with Prime Frenched Beef Ribeye

Ribeye steak is known for being tender yet full of streaky intramuscular fat. It is a cut of meat taken from the cow’s beef rib. A primal cut, the ribeye is typically taken from between the sixth and 12th ribs. Prime Frenched Beef Ribeye from ibp Trusted Excellence® brand delivers rich marbling and a buttery mouthfeel, along with luxurious flavor, tender texture and unparalleled juiciness—there’s a reason ribeye is a favorite among steak lovers as well as restaurants that serve steak. ibp Trusted Excellence® Prime Frenched Beef Ribeye is a premium cut that delivers an exceptional, elevated eating experience every time. But beyond its quality, it also helps ease the workload back of house, as it comes pre-trimmed and pre-Frenched. It offers restaurants versatility and can be prepared in a variety of ways to highlight different flavor profiles.

What’s Special About Prime Frenched Beef Ribeye?

ibp Trusted Excellence® Prime Frenched Beef Ribeye arrives pre-trimmed, lessening the labor required to get it ready for cooking and serving. To “French” a bone elevates the meat’s presentation, as it cuts meat away from the end of the bone and exposes the bone. This creates a high-end, impressive appearance on the plate. Additionally, this cut can be portioned into “Tomahawk” style steaks easily, as they are already trimmed and you can see where to cut. Tomahawk steaks tend to be thicker and heavier than standard ribeye steaks, which makes them perfect for dinners involving two or more diners—and they can be priced accordingly, as well.

Cooking Techniques for Prime Frenched Beef Ribeye

Depending on what equipment is available and what makes most sense for preparation timing, there are a few methods of cooking to explore for ibp Trusted Excellence® Prime Frenched Beef Ribeye:

Grilling is one of the most popular cooking methods for ribeye steaks because the high heat helps thoroughly melt the marbling. This crisps up some areas for a juicy, unctuous mouthfeel and unforgettable flavor.

Sous vide is a method of cooking that involves sealing the meat in a special bag, then immersing it in water that’s kept at a specific temperature. This method results in a steak with perfect doneness (as determined by the water temperature set at the beginning of cooking). However, this method means there is no crispy fat or sear delivered by direct-heat methods.

Pan-searing works well when you don’t have access to a grill. A cast iron skillet will deliver a beautiful, golden crust, and flavor can be added by topping the steaks with a compound butter or fresh herbs. Note that thicker cuts may need to be finished in the oven to ensure doneness.

How long you should cook the ribeye is dependent on the customer’s desired doneness. Whether rare, medium rare, medium, medium well or well done, steaks should be cooked to a certain temperature:

Rare: 125°F — about 3 to 4 minutes each side

Medium rare: 135°F — about 3.5 to 4.5 minutes each side

Medium: 145°F — about 4 to 4.5 minutes each side

Medium well: 150°F — about 5 to 5.5 minutes each side

Well: 160°F+ — about 5.5 to 6 minutes each side
