French Onion Crispy Chicken Melt Recipe

Crispy breaded chicken breast topped with savory caramelized onions and melted gruyere cheese on a toasted pretzel roll with a spread of tangy Dijon mustard. Served with a side of steak fries, this savory, comforting meal will have guests coming back for more, time and time again.

1 ea.Pretzel Roll, Halved
1 ea.Gruyere Cheese Slice
2 oz.Caramelized Onions (Sub-Recipe)
1 oz.Arugula
1 tbsp.Dijon Mustard
4 oz.Steak Fries, Cooked and Held Hot

French Onion Soup - Style Caramelized Onions

YIELD: 1 CUP - 4 Portions

AMOUNTSUB-RECIPE INGREDIENTS
4 cupYellow Onion, Julliened
2 tbsp.Unsalted Butter
1/2 tsp.Salt
1/2 tsp.Sugar
1/2 tsp.Beef Broth
2 tsp.Worcestershire
1 tsp.Balsamic Vinegar
4-5 ea.Fresh Thyme Sprigs
Directions

Step 1: Deep fry 4-6 minutes at 350°F from frozen, or until internal temperature reaches 165°F. Hold hot for service.

Step 2: While the chicken is cooking, toast the pretzel bun on a flat top over medium heat. Remove from heat and spread Dijon mustard on bottom half of pretzel bun.

Step 3: Melt gruyere over the top of chicken fillet. Place cheesy chicken filet on bottom half of pretzel bun on service plate.

Step 4: Top chicken fillet with caramelized onions, fresh arugula and top half of pretzel bun. 

Step 5: Add side of steak fries to plate and serve immediately.

French Onion Soup - Style Caramelized Onions

Step 1: In a skillet over medium heat, melt butter. Add sliced onions, thyme, salt, and sugar.

Step 2: Cook slowly, stirring occasionally, until onions begin to caramelize and turn a dark brown color.

Step 3: Add Worcestershire and balsamic vinegar and continue to cook until liquid is almost gone.

Step 4: Add beef broth and cook down until liquid is almost gone.

Step 5: Remove thyme and hold warm for service.
