Salsa Molcajete

Step 1: Preheat a flattop grill at 350°F.
Step 2: Place two tortillas onto the flattop grill; warm for up to one minute and then remove from heat and place on work surface.
Step 3: Fill tortillas with scrambled egg, fried potatoes, chorizo crumbles and bacon pieces. Gently lay two slices of avocado on top of each taco then sprinkle each with shredded cheese.
Step 4: Transfer tacos to service plate or service taco holders. Pair with a side of salsa and lime wedges; serve immediately.
Salsa Molcajete
Step 1: Warm a griddle or cast iron pan to high heat.
Step 2: Place tomato, tomatillo, onion, jalapeño, serrano, and garlic on griddle. Heat on one side until they become soft and slightly charred, about 7-10 minutes.
Step 3: Flip them all over and continue to char for another 5-7 minutes, keeping an eye on garlic as it will become done before the other ingredients. Remove all ingredients from heat and set aside.
Step 4: Peel away some of the charred skin from the tomatoes and peppers, discarding of what is removed.
Step 5: Place all charred ingredients, cilantro, lime juice and salt into a food processor. Pulse until desired consistency is reached.
Step 6: Use for service immediately or cover and reserve chilled for later use.
