Spicy Chicken Pakora Sandwich Recipe

Spicy whole muscle chicken fillet served on a whole grain bun with a creamy avocado mint spread and masala spiced roasted corn aioli relish

Tyson® Fully Cooked, Whole Grain Breaded Hot 'N Spicy Made w/ Whole Muscle Chicken Breast Filets, #10703120928

10 ea

Whole Wheat Bun

 

"Indian Corn Relish"

10 oz.

Simplot RoastWorks® Flame-Roasted Corn & Jalapeno Blend

3 Tbsp.

Lime Juice

3 Tbsp.

EVOO (extra virgin olive oil)

5 tsp.

Garam Masala, dry spice

 

"Avocado Mint Yogurt"

5 oz.

Simplot Harvest Fresh™ Avocados Chunky Avocado Pulp, Thawed

5 oz.

Greek Yogurt

3 Tbsp.

Mint, fresh chopped

3 Tbsp.

Scallion, thin sliced

Directions

Step 1 - Heat roasted corn according to package instructions. Cool corn before combining in bowl with EVOO, lime juice and masala spice. Cover and hold cold until serving

Step 2 - Mix avocado pulp, yogurt, mint, and scallions.  Cover and hold cold until serving.

Step 3 - Preheat oven to 350°F. Place frozen filets on a parchment lined baking sheet. Heat for 14 to 17 minutes. Hold in warmer until ready to serve.

To serve:

  1. Open buns on prep service and spread with 2 Tbsp. of avocado mint spread on the bottom bun
  2. Top bottom bun with the spicy fillet,
  3. Top the filet with 1 oz. of the corn relish and top bun
  4. Serve warm
