Sweet Chili Chicken Rice Bowl Recipe

Lightly breaded, tender, whole muscle chicken bites coated in sweet chili sauce, served with fresh carrot shreds, bright broccolini and sweet peas over a bed of tender white rice, topped with scallion and sesame seeds.

Ingredients

YIELD: 1 Serving

AMOUNTMAIN INGREDIENTS
4 cupsTyson® Mini Chicken Bites
1 tbsp.Olive Oil
1 cupFresh Sweet Peas
1 bunchFresh Broccolini, Trimmed
1 cupShredded Fresh Carrots
1/2 cupSweet Chili Sauce, Premade
3 cupsWhite Rice, Cooked
1 tbsp.Black and White Sesame Seeds
4 tbsp.Fresh Scallion, Thinly Sliced
Directions

Step 1: In a medium skillet over medium heat, warm chicken pieces until slightly crisp (about 5 - 7-minutes).

Step 2: While the chicken warms, bring a small pot of water to a boil. Add broccolini and peas; cook for 2 - 3-minutes or until bright green and tender-crisp. Drain well and set aside. 

Step 3: Reduce heat on skillet of chicken to low. Add sweet chili sauce and toss until chicken is evenly coated. Remove from heat.

Step 4: Place 3/4 cup of cooked white rice into each service bowl. Arrange shredded carrots, sweet peas, and broccolini in heaps at edge of bowl, then add chicken in the center. Sprinkle with sesame seeds and scallions; serve immediately.
