Root Vegetable Hash

1 TbspOil, Canola, Prepared
1 TbspButter, Unsalted, Soften
2 OzShallot, Fresh, Julienned, ¼ in.
1 tsp.Garlic, Clove, Fresh, Peeled, Minced
4 OzPotato, Sweet, Orange, Peeled, Diced, ½ in.
4 OzPotato, Purple, Peruvian, Diced, ½ in.
4 OzCarrot, Orange, Fresh, Peeled, Diced, ½ in.
4 OzApples, Green, Fresh, Skon, Diced, ½ in.
½ tsp.Salt, Kosher
1 TbspHerb, Parsley, Flat-Leaf, Fresh, Chopped
2 tsp.Herb, Thyme, Fresh, Chopped

Directions

Step 1: Place serving skillet onto a clean work surface.

Step 2: Place the cooked root vegetable hash into the skillet.

Step 3: To one side of the skillet, place 2 sunny side up eggs on top of the root vegetable hash.

Step 4: Place the Aidells® Smoked Chicken and Apple Chicken Sausage Breakfast Links next to the sunny side up eggs.

Step 5: Serve as needed.

Sub Recipe Directions

Root Vegetable Hash

Step 1: Place a cast-iron skillet on medium heat.

Step 2: Place canola oil and butter into the skillet.

Step 3: Add the shallot, garlic into the skillet and saute for approximately 2 minutes.

Step 4: Add the sweet potato, Peruvian potato and carrot into the skillet and sauté until soft, about 15 minutes. 

Step 5: Add in the diced apple and continue to saute for approximately 2 minutes or until apple has slightly softened.

Step 6: Next, add salt, parsley, thyme, and sage to the skillet and gently toss to combine.

Step 7: Remove from heat and serve as needed.

Convection: Cook from frozen. 1. Preheat convection oven to 350°F. 2. Place frozen links on a parchment lined sheet pan. 3. Cook 16-18 minutes or to a minimum internal temperature of at least 165°F, turning halfway for even browning.
